This is the ultimate comfort dish. Perfect for a cold winter day. This crispy chicken with tomato and kale sauce is easiest if you practice mise en place. If you did not know already, that is the term used to describe preparing and organizing all of your ingredients before cooking. This helps the dish come together quicker and more efficiently.

Let’s talk about this crispy chicken in tomato and kale sauce. I first made this many moons ago. It started as an attempt at a fancy date night dinner. Believe it or not, the image shown here is the original photo taken back in probably 2014.

I was so proud of this dish! The very first time I made it, I took this picture. Now it lives on this site forever. I’ve made this crispy chicken in tomato and kale sauce many times, but something about seeing this “old school” picture just warms my heart. So I’ve left it.

That’s something I find different in the way I share my content, versus the way that the average influencer or content creator is sharing. This is not the best photo I have taken of this chicken dish, it’s also not last time I’ve made it either. But the story behind this specific photo is worthy of sharing.

You can imagine how excited John was when I brought this plate to the table. I was probably 19 or 20 at the time. We’d been living on our own only a year or two. This was a top notch meal. Every time John sees this photo, without a doubt he makes a comment along the lines of “that was a good meal!”. Nearly a decade later, he remember this meal, this photo.

Crispy Chicken in Tomato and Kale Sauce with Garlic Crostini

Cook Time 20 minutes
Total Time 35 minutes

Ingredients
  

  • 2 Chicken Breasts
  • 1 Cup Flour
  • 1/2 Yellow Onion diced
  • 1/2 Green Bell Pepper diced
  • 5 Cloves of Garlic mince 4 slice 1 in half
  • 1 Can Crushed Tomatoes
  • 1/2 Cup Water
  • 1 Bunch of Lacinato Kale ripped or cut in small piece
  • 1 Small Baguette
  • 1/3 Cup Parmesan Cheese
  • 1/2 Teaspoon Crushed Red Pepper Flakes
  • Olive Oil
  • salt & pepper

Instructions
 

  • Preheat oven to 450 degrees.
  • Place the flour in a shallow dish with 1 teaspoon of salt and 1 teaspoon of pepper. Stir to combine and set aside. Also, measure 1/3 cup of parmesan cheese and set aside.
  • Dice the 1/2 of an onion and 1/2 of a green bell pepper in small pieces and set aside. Peel and mince 4 cloves of garlic, slice the 5th clove in half.
  • Wash and dry the kale and cut it into small pieces.Set aside.
  • Slice baguette into 1 inch pieces. Coat one side with olive oil, place on a tray and set aside.
  • Ensure chicken is pounded thin (~1/4″)
  • Begin heating 3 tablespoons of olive oil in a skillet over medium heat.
  • Dip the chicken in the flour and coat both sides. Cook in skillet for 4 minutes per side, or until cooked through.
  • In a second deeper skillet, begin heating 2 tablespoons of olive oil. Add onion, bell pepper, garlic, and red pepper flakes. Cook for roughly 5 minutes stirring until softened.
  • Add can of crushed tomatoes and kale. Add 1/2 cup of water. Continue simmering over a low-medium heat until reduced slightly, approximately 10 minutes.
  • While simmering, place tray of bread in oven. Allow to cook approximately 5 minutes or until crispy.
  • Once the bread is done, rub the sliced garlic over each piece and sprinkle parmesan cheese.
  • To plate, put a little tomato sauce in the bottom of the plate, place the chicken on top and put more sauce over the chicken, sprinkle with more parmesan. Use the bread to soak up the yummy tomato sauce.
