Pasta with Roasted Red Pepper Sauce
This is honestly the best pasta sauce. I know the pictures are ugly but I DON’T CARE! I cannot tell you why this doesn’t photograph well, but it just doesn’t!
This is such a great dish that I still have to share it. This pasta with roasted red pepper sauce is amazing! The sweetness of the red pepper really adds a unique flavor to this pasta dish.
Don’t skip roasting the veggies either! Roasting the red peppers and onions before blending them deepens the flavor profile. It starts to caramelize the sugars in the red peppers, while giving the sauce a smokier flavor.
Packed with antioxidants, vitamin C, and vitamin B6, I’m always looking for ways to incorporate this tasty veg into meals. This is an incredibly easy sauce to make. It can be made on a weeknight as it just involves roasted some veggies and blending them all up! I think this also is a great dish to make with kids, as it has some easy steps that they can help with. The use of red pepper ensure the dish doesn’t get too spicy.

Pasta with Roasted Red Pepper Sauce

This is an incredibly easy sauce to make, as it just involves roasting some veggies and blending them all up!

- 6 oz dried pasta
- 3 red bell peppers sliced
- 1 small red onion or 1/2 large red onion roughly quartered
- 2-4 cloves of garlic smashed
- 1/3 cup tomato sauce
- 1/3 cup reserved pasta water
- 1 tsp each: salt pepper, dried basil, dried oregano
Heat oven to 425 degrees. Begin cooking pasta according to package, less 1 minute.
While pasta cooks, begin sauce. On a tray with parchment paper or foil, pull sliced bell pepper, onion, and garlic.
Roast ~20 minutes, or until starting to brown and very fragrant.
Once veggies have roasted, remove from oven and blend until smooth.
Heat sauce in pan with tomato sauce and reserved pasta water. Add seasoning and drained pasta. Simmer for 2-3 minutes, until pasta is cooked and sauce has formed.
Serve with parmesan and red pepper flakes if desired.
