Super Easy Tomato Pasta
Garden to table – it’s my summer motto. All our meals during the summer revolve around what we can create from our garden. One of our absolute favorite meals is simple and involves just 6 ingredients.
Yep that’s right! This super easy tomato pasta is made with just tomatoes, onion, garlic, basil, olive oil, pasta. Does it get any easier and fresher than that?
The thing about this recipe is it is not a traditional recipe (i.e. 2 cups of tomato, 3 tsp of salt). This is more of a toss as much as you want and call it a day. Below I explain how I tend to make this super easy pasta dish. But trust me, putting your own twist on it is going to make it that must better!
This super easy tomato pasta was one of the first things I made when John and I started gardening. Over the years we have added whatever other veg we have on hand, dice some mushrooms if you have ’em. Got a lot of kale? Wilt that down into this too! That’s the beauty of this dish. It is super simple and really a base for which you can make perfect for your taste.
Have really good red pepper flakes? Toss them in! What about dried herbs? Yep – those too. Whatever you have toss it in! Comment below what your favorite add-in is!
Super Easy Tomato Pasta
Garden to table – it’s my summer motto. All our meals during the summer revolve around what we can create from our garden. One of our absolute favorite meals is simple and involves just 6 ingredients: tomatoes, onion, garlic, basil, olive oil, pasta.
Prep Time 5 minutes mins
Cook Time 15 minutes mins
Total Time 20 minutes mins
- 1/2 Lb Pasta of choice
- 2 Tbsp Extra Virgin Olive Oil
- 1/2 Onion diced
- 2 Cloves Garlic minced
- 6-8 Roma or San Marzano tomatoes
- Handful of fresh chopped basil
Boil pasta according to package. Reserve 1/2 cup pasta water.
In a saute pan, add olive oil and onion – sauteing until onions are soft and translucent. Add the garlic.
Once garlic is fragrant, add tomatoes. Continue cooking until soft, 6-8 minutes.
Add all the herbs! This is the point to add s&p, dried basil, oregano, fennel seed,… you name it!
Add pasta to pan and mix well to combine. Add pasta water if needed. Sprinkle with basil. A few red pepper flakes never hurt anybody either!
