Banana Bread [the best!!]

A super easy, super tasty recipe. Practically fool proof and incredibly moist!

I have made variations of banana bread for years! It was one of the first recipes I learned to make in college. It is also incredibly easy to adapt to be totally vegan.

During the 2020 pandemic, making this tasty bread even became trendy, and was baked by practically everyone! It is such a simple recipe that even kids can make it!

However, you can really only eat so much plain banana bread, right? Especially if it’s dry and just – plain. Ick!

If you know John, you know he likes the finer things. We like to joke that anything that is “extra” or “fancy” in anyway is designer. So let me introduce you to what John calls my Designer Banana Bread.

Let’s talk about it. We nod the traditional banana bread with the chopped walnuts. They add a nice crunch and add a bit of saltiness. Add some cinnamon to spice it up.

Now the true tasty secret. This is not something you would expect but it is a must for this designer bread. Read? OK – coconut flakes. Yep – I know, it sounds kind of weird but try it. It is absolutely amazing! I like to use unsweetened flakes because the bananas are already sweet enough. However, you totally can use sweetened if you like!

The sparkling sugar on top is my mom’s trick. This extra sugar is unnecessary, – said no one ever! This does two things. Adds some additional sweetness but after melting in the oven and hardening as it cools, it adds this awesome crunch. You also could add a crumble topping by mixing some brown sugar and oats to sprinkle on top.

Ingredients
  

  • 3 extra ripe bananas
  • 1/3 cup melted butter
  • 2 tsp vanilla extract
  • 1/4 cup sugar
  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 cup chopped walnuts
  • 1/2 cup coconut flakes
  • 3 tsp sprinkling or sparkling sugar

Instructions
 

  • Preheat oven to 350 degrees. Grease a 9 x 5 loaf pan. 2. In a bowl, mash bananas well. Add melted butter, sugar, and vanilla extract. Stir well.
  • In a small bowl combine flour, baking soda, and cinnamon. Add to the wet ingredients and combine.
  • Fold in walnuts and coconut flakes. Add to greased loaf pan and top with sparkling or sprinkling sugar.
  • Bake for 1 hour, or until at least 200 degrees. If wrapped well, can be frozen for 3-4 months.
