Ingredients

extra ripe bananas

cup
melted butter

vanilla extract

sugar

flour

baking soda

cinnamon
1/4
cup
chopped walnuts
1/2
cup
coconut flakes

sprinkling or sparkling sugar
Instructions
Preheat oven to 350 degrees. Grease a 9 x 5 loaf pan. 2. In a bowl, mash bananas well. Add melted butter, sugar, and vanilla extract. Stir well.
In a small bowl combine flour, baking soda, and cinnamon. Add to the wet ingredients and combine.
Fold in walnuts and coconut flakes. Add to greased loaf pan and top with sparkling or sprinkling sugar.
Bake for 1 hour, or until at least 200 degrees. If wrapped well, can be frozen for 3-4 months.
