Banana Bread

iations of banana bread for years! It was one of the first recipes I learned to make in college. It is also incredibly easy to adapt to be totally vegan

Ingredients
  

  • 3 extra ripe bananas
  • 1/3 cup melted butter
  • 2 tsp vanilla extract
  • 1/4 cup sugar
  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 cup chopped walnuts
  • 1/2 cup coconut flakes
  • 3 tsp sprinkling or sparkling sugar

Instructions
 

  • Preheat oven to 350 degrees. Grease a 9 x 5 loaf pan. 2. In a bowl, mash bananas well. Add melted butter, sugar, and vanilla extract. Stir well.
  • In a small bowl combine flour, baking soda, and cinnamon. Add to the wet ingredients and combine.
  • Fold in walnuts and coconut flakes. Add to greased loaf pan and top with sparkling or sprinkling sugar.
  • Bake for 1 hour, or until at least 200 degrees. If wrapped well, can be frozen for 3-4 months.
