Burst Tomatoes with Burrata and Arugula

April Showers have me dreaming of garden fresh tomatoes bursting with sweetness. Can we have a moment for this dish?!

Burst tomatoes with burrata and arugula is the most amazing dish. And one of my favorite ways to use up overflow tomatoes. Keep scrolling to read why we love it!

burrata and burst tomatoes

Imagine this: it’s a hot summer night. Your garden is overflowing with tomatoes. You take the five minutes to burst the tomatoes with some olive oil and garlic. Pop down in your favorite seat outside on the patio and enjoy the summer evening with this dish and a cold adult bev!

This might be one of the easiest dinners we have ever posted. Yet, burst tomatoes with burrata and arugula is by far one of the most flavorful and delicious summer dishes you can make! As the tomatoes burst, they release this bit of sweetness that is perfectly balanced by the peppery arugula. Allowing them to burst and release juice makes the perfect “dressing” for the greens. To counter any spiciness from the garlic, chili flakes, and even arugula, we enjoy a creamy burrata ball with this.

I promise if you give this a try, it will be a new favorite!
