Burst Tomatoes with Arugula and Burrata

I mean seriously! This might be one of the easiest dinners we've posted - yet is by far one of the most flavorful and delicious! As the tomatoes burst, they release this bit of sweetness that is perfectly balanced by the peppery arugula and creamy burrata. I promise this will be a new favorite!

Ingredients
  

  • 1 pint cherry tomatoes
  • 3 tbsp good olive oil
  • 2 cloves sliced garlic
  • dried basil oregano thyme to taste
  • 3 ish cups arugula
  • 1 ball burrata
  • salt pepper red pepper flakes to taste

Instructions
 

  • Heat 1 tbsp olive oil in heavy skillet on high.
  • Toss tomatoes in 1 tbsp olive oil, sliced garlic, and herbs until well coated.
  • Pour into hot skillet, gently stirring until tomatoes begin to burst and release juice, approximately 5 minutes.
  • To serve: divide tomatoes between plates, top with arugula and burrata, split between plates.
  • Drizzle the final tbsp of olive oil over each dish and top with salt, pepper, and red pepper flakes.
  • Enjoy with a crusty bread or on its own!
