[Updated 2022] I have made this Garlicky Pasta with Toasted Breadcrumbs more times than I can count since the time I originally published this in 2019. Since that time, we’ve moved, changed jobs, bought cars, we’ve traveled to Italy, and even gone through a worldwide pandemic.

Nevertheless, this dish always remained a constant. No matter how rough or long or tiring the day, this dish could be ready in 20 minutes to fill us up and leave us happy.


[Original] I am writing this on February 24, 2019 at 6:20 PM. Normally, John and I would be at least eating by now. We had several errands to run after work, and we are just now getting home. In the car, we debated if we should just stop and grab “fast food”. And by fast food, I mean McDonald’s or BK.

Ugh – we both thought. Neither of us were excited at the thought of upset stomachs and lethargy the next day.

I then remembered one of our favorites meals, Garlicky Pasta with Toasted Breadcrumbs. I figured I should document this; For myself, and for you, as a reminder that fast food can be made at home. You don’t need to just go grab something. You can make something so delicious at home, packed with flavor from the garlicky pasta, the herbed and toasted breadcrumbs, fresh Parm and a sprinkle of parsley. Perfection!

Garlicky Pasta with Toasted Breadcrumbs

This is a meal for busy nights. You don’t need to get a fast food burger to have a comforting meal in a hurry. I hope you find this recipe as simple and delicious as we do!
Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes

Ingredients
  

  • 5 Oz Pasta of choice
  • 2 tbsp butter
  • 1-2 tbsp evoo
  • 1/4 cup bread crumbs
  • 1/2 Small onion diced
  • 2 cloves garlic minced
  • Salt pepper, and red pepper flakes to taste
  • 1/4 Cup parmesan cheese
  • chopped parsley for topping

Instructions
 

  • Cook pasta according to package, saving ~1/2 cup pasta water.
  • While pasta cooks, toast breadcrumbs until brown at 375 degrees (approx. 5-7 min)
  • Heat a skillet and melt olive oil. Add diced onion and cook until translucent.
  • Add butter, garlic, and red pepper flakes. Cook until fragrant and butter has melted. Set aside until pasta is done.
  • Add drained pasta to the garlicky olive oil and toss. Add pasta water slowly to reach desired consistency.
  • Toss with bread crumbs, parsley, and lots of parm.
