Chickpea Salad Sandwich

As we begin a new decade, it's important to spend time focusing on how we can reduce our footprints here on this Earth. One simple way is to cut down or eliminate meat. John and I are committed to trying to cut down meat in our diets significantly. On our journey to a more plant-based diet, we came across this tasty sandwich and had to share! It's a spin on the classic chicken salad sandwich, we know it'll satisfy your craving for a hearty sandwich!

Ingredients
  

  • 1 Can chickpeas drained and rinsed
  • 1/2 cup vegan mayo*
  • 2 tsp fresh lemon juice
  • 2 tsp mustard
  • 2 tsp dill
  • Salt and pepper to taste
  • 3 sandwich thins or 6 slices of bread

Toppings

  • 1 avocado sliced
  • 1 to mato sliced
  • 1 cucumber sliced
  • Fresh greens pictured here: arugula

Instructions
 

  • Combine first 6 ingredients in a bowl. Crush gently until some chickpeas are mashed, leaving some whole for added texture.
  • On a sandwich thin, add sliced avocado, sliced tomato, sliced cucumber.
  • Add the chickpea salad. Top with greens and an extra squeeze of lemon juice.
  • That’s it! Really, it’s that simple.

Notes

Vegan Mayo… say whaaaa-? Yep, that’s right – vegan mayo. I’m not sure where it has been my whole life but it’s amazing! I really love Follow Your Heart’sVegenaise. I think it has a nearly identical flavor and consistency as traditional egg-based mayo. You can find this at your local Target and many other stores as well!
