Cinnamon Sugar Pretzel Bites

Confession: I love mall pretzels. Something about the combination of the crispy, buttery exterior and the fluffy warm inside.. YUM! I discovered in college how to make them when I realized they didn’t have a pretzel joint in the mall. This recipe is easier than you would think and tastes absolutely divine!

Ingredients
  

Pretzels

  • 2-1/4 Tsp instant yeast
  • 1-1/2 Cup Warm water
  • 1 Tsp salt
  • 1 Tbsp Brown Sugar
  • 2 Tbsp Melted Butter
  • 4 Cups Flour
  • 1 egg + 1 tbsp water
  • 9 Cups Water
  • 1/2 Cup Baking Soda

Cinnamon Sugar

  • 1/4 Cup melted butter
  • 3/4 Cup sugar
  • 3 Tsp cinnamon

Instructions
 

  • Dissolve yeast in 1-1/2 cup warm water. Stir until combined.
  • Add salt, sugar, and butter stirring well.
  • Add flour, 1 cup at a time until dough is thick and no longer sticky. If still sticky after adding flour, add 1 tbsp at a time until it isn’t sticky.
  • The dough should bounce back after poking it.
  • Flour a flat surface and knead dough for about 5 minutes, forming a dough ball.
  • Coat a bowl in cooking spray before placing dough. Allow dough to sit for 20 minutes in a warm area, covered with a dish towel.
  • In the meantime, preheat oven to 425 degrees.
  • Beat together 1 egg and 1 tbsp of water in a small bowl.
  • Also during this time, bring 9 cups of water and 1/2 cup baking soda to boil.
  • After 20 minutes, cut dough into 6 sections. Roll each section into 1 inch thick ropes and cut into 1 to 1-1/2 inch pieces.
  • After cutting pieces, place 6-10 bites into the hot water/baking soda mix.
  • Allow them to sit for about 25 seconds before removing with slotted spoon. Repeat with all bites.
  • Place pieces on a greased or lined baking sheet. Brush with egg/water mixture.
  • Bake for 15 minutes or until tops are brown.
  • While bites cook, melt 1/4 cup of butter in a small bowl. Mix together cinnamon and sugar in a bowl.
  • After bites are cooked, dip warm bites in melted butter and then immediately dip in cinnamon-sugar mixture.
  • Set on clean plate or tray. Serve warm for best experience.

Notes

Save cooked bites in airtight container for up to 3 days. Microwave 10 seconds and dip in melted butter + cinnamon sugar.
